With Christoph Huber from Blaue Traube, we share not only a close friendship, but also a common vision of modern Alpine cuisine. Together, we developed the culinary concept for the ROTWAND Mountain Restaurant — shaped by regionality, lightness, and a contemporary approach.
At Blaue Traube, Christoph interprets South Tyrolean cuisine with precision and restraint, showing deep appreciation for regional products and seasonal ingredients. At lunchtime, the restaurant offers a relaxed and uncomplicated atmosphere with a carefully selected à la carte menu. In the evening, guests are invited to enjoy an elegant tasting menu — also available in a vegetarian version — showcasing the aromas and diversity of the region in a modern way.
