"Pasta fresca" at MIRAMONTI

Since 2023, different types of pasta have been produced every Tuesday morning in the MIRAMONTI kitchen. The initiative was started by Sous Chef Sergio, who loves the artisanal preparation of fresh pasta. Every week, around 15 kg of pasta is prepared with a special mixture of 00 flour and durum wheat flour produced by 'Molino Casillo' in Apulia. Guests can enjoy the pasta in all three MIRAMONTI restaurants.


Sergio reveals us his favourite pasta dish and recipe: Maccheroncelli aglio, olio e peperoncino, a real Italian classic with very few ingredients but a very special recipe.
